When Ruggiero Lattanzio sold La Disfida in Haberfield last year, he hinted at semi-retirement. Instead, he’s just opened Top Level Pizza on King Street in Newtown.

Lattanzio is a pioneer of Sydney’s pizza revolution, with La Disfida’s Neopolitan-style pizzas featuring elegantly thin bases, light and bubbly crusts and beautifully fresh-tasting toppings. This tradition is now being carried on by Peter Zuzza, whose family ran Glebe’s legendary Mixing Pot restaurant for 25 years and has taken over La Disfida.

Lattanzio says he almost opened in Surry Hills. “You always look [for sites] even when you’re not interested,” he says. “Then you realise you are.”

So, after an Italian sojourn he’s back at the oven-face.

For Lattanzio the Newtown location has appeal beyond falling outside the three-kilometre exclusion zone he agreed to as a condition of the La Disfida sale.

“It’s busy, I like that. I don’t come from a village in Italy.”
